Shaw River Buffalo Cheese – Australia's only water buffalo farm house dairy is located along side the Shaw River near the small coastal town of Yambuk in Victoria's Southwest. The herd began with the importation of Riverine Buffalo from Italy in May 1995 and Murrah Buffalo from Bulgaria in 1996. The cows are milked once a day with an average milk production of 8 litres per cow. The milk is porcelain white and has a smooth sweet taste. It contains twice the milk solids of bovine (cows) milk, about 30% more calcium and has high levels of antioxidants.
Ashgrove Cheese – Ashgrove Cheese is located in the countryside of Elizabeth Town in central Northern Tasmania. In 1993 the Bennett family established the cheese factory to value add to the milk being produced on the farm. Today the farming operation has expanded to milk over 900 Friesian dairy cows on two dairy farms and only milk from these properties are used in their cheese production. Ashgrove Cheese is the only cheese producer in Australia specialising in the production of English county styles of cheese such as Lancashire, Cheshire, Double Gloucester, Red Leicester and traditional style Cheddar. The cheese is all produced by hand using traditional recipes and techniques which ensures individual flavours and textures are achieved in every variety of cheese.
Meredith Dairy - Meredith Dairy is a small specialist farm house dairy situated half way between Ballarat and Geelong in Victoria. The dairy started with the milking of sheep in 1992 and goats in 1993 with both being milked the year round ensuring a consistent milk quality. All Meredith cheeses are hand made using French Farmhouse methods and mostly French derived cultures. The Blue spores used in the outstanding ewes milk blue cheese are derived from the caves in the regions of Auvergne and Languedoc in the south of France. Meredith cheeses are unique in flavour, texture, appearance and aroma and are truly world class.
In addition to these 3 unique brands of cheese Mulwarra is also able to supply cheeses from other specialist producers.
